Limoncello Recipe

 

10 unwaxed lemons

1 litre pure alcohol

880 gms caster sugar

1.1 litres water

 

 

Peel the rind off the lemons making sure there is no pith.

Drop into a gallon jar.

Add 1 litre of pure alcohol 140 proof

Leave 30 days, shaking to mix every 5 days.  Strain.

Take 1.1 litres of water and boil.  Add into this 880 gms of caster sugar and return to boil for 1 minute to dissolve sugar.  Allow to cool then blend into lemon liquid.

Rest for 2 days then bottle.

Put in the freezer and drink from freezer.  Place glasses in freezer to chill before serving.
